║today my way║

sweet-potato-muffins-start-the-day-happy-todaymyway

I'm not a morning person but I am a breakfast person, one that has to be reasonably full before heading out the door. But it is that time of year again that jumping out of bed ecstatically means no fun unless someone is cooking for you and the whole space smells of heaven (sunflowers optional). I figured out simplicity mixed with deliciousness is everything I want from my breakfast this season. Something prepared earlier needing only a little to satisfy is the recipe for success. In this combo muffins were the hardest therefore baked in advance ingredient topped with a five minute blueberry compote sacrifice. It literally takes minutes to cook while the air absorbs the smell and no one will stay in bed for long. For the compote you only need a small amount of berries, two tablespoons of orange juice (or any juice available), half teaspoon of vanilla extract and a dash of cinnamon cooked for 10 minutes on high, stirring frequently. As for the muffins...

Recipe was found in It's All Good cookbook by Gwyneth Partlow and loved ever since. Not too messy and laborious those muffins became an easy snack around here especially that they can be paired with anything my taste buds fancy that morning: a dab of nutella, jam or marmalade, apple or apricot compote, it's an evolving process. So onto the recipe! You'll need:

1 large sweet potato
1/2 cup extra virgin olive oil
1/2 cup unsweetened almond milk
3/4 cup good-quality maple syrup plus 2 extra tablespoons for brushing the muffins
1 teaspoon pure vanilla extract
2 cups gluten free flour (if it doesn't include xantham gum, add 1 teaspoon)
2 teaspoons baking powder
2 teaspoons baking soda
1  and 1/2 tablespoons Chinese five-spice powder
1/2 teaspoon fine sea salt

Preheat the oven to 400F. Prick the sweet potato a few times with a paring knife or fork. Bake until soft (when a paring knife can cut through with zero resistance), about 1 hour. Set the sweet potato aside until it's completely cool.

Peel the sweet potato, discard the skin and mash the flesh in a mixing bowl with a fork. Whisk the olive oil, almond milk, maple syrup and vanilla into the sweet potato. In a separate bowl, whisk together the flour, baking powder, baking soda, five-spice powder and salt. Fold the dry ingredients into the wet ingredients.

Line a 12-cup muffin tray with paper liners and evenly distribute the muffin batter among the cups. Bake at 400 F for 20 to 25 minutes, or until a toothpick comes out clean, brushing the tops with extra maple syrup during the last 5 minutes of baking. let the muffins cool before serving.

CUSTOMIZING AUTUMN

CUSTOMIZING AUTUMN
Coat: Mango, Scarf: Asos, Jeans and fringe boots: H&M

Although I was born in winter (this day is coming, I can't wait), autumn’s the season that tops my all time list of things easy to love. Right now I couldn’t be happier with the view out my window and the sound under my feet. I’m in love with everything colourful afternoons and chilly mornings have to offer and more: shopping for warm clothes for my daughter, having evening board games contests accompanied by hot chocolate, eating dense soups with chunks of bread and potatoes, crisp, crunchy leaves under my feet and many more silently falling around calling us outdoors. Late autumn not only gives me excuse to wear a multitude of scarves and my woolen coat so warm I barely wear it zipped up but it also got me overjoyed with candle warmth around the flat. If I’m ever going to own a house, I will most definitely move in at this time of year to sit in the front porch after muscle weighing down with a spiced heated wine in hand. With all that and the sun setting earlier each day my mum is coming to visit. How couldn’t I be in love with it all?

WE'RE SO INTO THE WAY THIS LIFE TURNS

WE'RE SO INTO THE WAY THIS LIFE TURNS
Life overwhelms again. Suddenly afternoon dates dusted their coats off and stepped ahead first time in seasons. Thanks to Nadia, her kind kindergarten and the weather almost making it work for us that day. It was pretty much just a quick meet-up at the nursery's door with my husband taking half day off at work and drive away to not-all-things-serious (picture me flirting with those citrus minions). With two afternoons a week to avoid just about everything grim we're ready for it, yeah let's do this thing more often! As you may predict the afternoon turned into window shopping, triple chocolate cookie tasting and not at all Harry Meets Sally kind of date. Although we tried we turned into those unquestionably mindless parents-run-free and did what time and place allowed without being forced to visit toddler-friendly departments although the idea never disappeared from our minds as we pointed at things she would like or she would unarguably abandon an evening later. I loved it to the last rain drop catching us just after picking up Nadia and snapping a few photos on our driveway. So yes, the afternoon date groove continues. xx

MY VERSION OF FALL

I predict this combination of woolen stitches will not happen again. Not in this colour burst let alone the weather so you gotta admire it while it lasts. Seen in action under jackets or dug under overcoat will make no difference for the camera especially the one I can only operate in 5%. As per images truly the moment in between acting fashionable and getting ready for winter dashed off with the ones and only above. But moving on, it never occurred to me tight-fitting in all the effective places garments were meant to be temporary in my life. My journey in tight exposures is ending but I like how my closet is turning out. I think I've figured out the thing about baggy and oversized and boyfriend's if you wish. The thing is that it accentuates just right all the goodness underneath. Not too obvious of course, there must be a guess involved. Loose-fitting is wonderful just for the fact that suddenly resumes the good stuff. And with good stuff I'm all darn predictably useful: rationing Christmas kept me busy this past week. Before I knew it I had four people ticked off of my crumpled list (and the most demanding age covered!). Ordered, wrapped that I don't even mind re-ordering and re-wrapping some more. Your Christmas shopping done already? Before December? Holy llama! November days even? Get a glimpse into how my organized brain is working. I have no interest in impulse-buying or I-really-have-to-take-it-home buying but once I'm done with essentials and necessities I still have time for super unpractical and what-fors. So my timing is spectacular, doesn't it excite you?  (particularly including my husband in the question). x

It wasn't super long or carefully planned but visually and mentally soothing experience when the sun set as I walked along the shoreline collecting pebbles and balancing on the rocks of Lulworth Cove. I guess we have spent too much time within concrete walls so the open space was something all of us needed. And by saying us I meant my little family plus two visiting guests from Poland. Where would have we taken them if not over 270 metres above sea level! The wind was rather disturbing and got creative with my hair lashing our bodies from every angle. Even though we managed to head down to the nearest village for a hot drink we knew we had to go back up again. Catching up with a regular breathing I've added a way too many photos of this beautiful spot to my collection. We visited a couple of other places that week so check back where the wind blew us this time.

As for the jacket that hardly left my shoulders for the past... erm ages, here is an update - a couple of days ago a black version has arrived. It's still familiarizing with other two grabs for winter I got my hands on and will appear here soon. Until then I'll do the impossible and sort the expanding pile of (little) clothes casually resting on the couch.

IN NO HURRY TO LEAVE

Now that the weather is a few degrees colder, we'd love to keep our escapades around Dorset well thought out and more organized but I guess as we're loosing one third of our team, some changes are in sight. By saying 'losing' I meant Damian's brother moving out of our flat and getting a pad together with his girlfriend. How exciting! We said our goodbye to beautiful in their windy mood cliffs of Lulworth Cove hoping for lots of exciting news and more emotional moments. We loved having J sharing a lot of aspects of our lives and will miss the unbeatable camera man to bits. Good luck with everything, J. It's the little things, right? x
